This article will introduce the application of rotary vane vacuum pump in carrot, and make use of rotary vane vacuum pump drying technology, further explore the vacuum drying characteristics of carrot, analyze the influence of vacuum pump on the drying characteristics of carrot, and what is the reason why vacuum rotary vacuum pump is used for vacuum drying, after all, there are many kinds of vacuum equipment. Carrot has high nutritional value and contains a variety of nutrients needed by human body. Therefore, the preservation method of carrots is a problem that many people are more concerned about.
With the development of society and the improvement of people’s living standard, carrots are more and more popular. Carrot is dried and processed into dehydrated radish slices. It is easy to preserve, eat and further process, so it has a good market prospect. There are many drying methods for carrots, but hot air drying is still the most common drying method. However, the hot air drying cycle is long and the drying quality is poor. Vacuum drying provides an alternative to conventional atmospheric drying, which allows moisture to be removed at low pressure. The rotary vane vacuum pump makes foam or expansion structure in food, and expands the volume of heat and mass transfer. Therefore, vacuum drying can achieve higher drying speed, lower drying temperature and anoxic treatment environment.

The effects of pressure and temperature of rotary vane vacuum pump on the drying characteristics of carrot were studied. The results show that: under the same system pressure, the higher the temperature, the faster the drying rate; at the same drying temperature, the lower the system pressure, the faster the drying rate.
Rotary vane vacuum pump is widely used in vacuum drying process. The moisture content in the material can be reduced through the clearance of moisture, so that the water and other solutions in the material can get enough kinetic energy to separate from the surface of the material. Due to the vacuum state (i.e. negative pressure) produced by the rotary vane vacuum pump, the vacuum drying can isolate the air, which makes some materials easy to oxidize and other chemical changes in the drying process better maintain the original characteristics, and can also better protect the materials by injecting inert gas and vacuumizing through the rotary vane vacuum pump.
